Indian Food Is Not Just One Kind of Food

“Let’s get Indian food tonight.” Simple enough. Except that phrase covers a lot of ground. Someone may immediately picture a rich curry. Someone else thinks of biryani. Another person is hoping for something crispy, while somebody at the table has already decided what they are ordering before they have even seen the menu. Indian cuisine is far too varied to fit neatly into one description. That is one of the reasons people keep coming back to it. 

The Same Country, Completely Different Plates 

India is enormous, and its food reflects that. What people eat in one part of the country may be very different from what is served hundreds of miles away. Ingredients change with the landscape. Cooking styles change with local traditions. Families pass down recipes that may not be prepared in quite the same way anywhere else. Rice plays a major role in many parts of the country. Elsewhere, breads may take centre stage. Some regions are known for rich gravies, while others lean toward dishes with brighter, sharper flavours. Then there are the ingredients. Coconut. Tamarind. Lentils. Fresh herbs. Different types of rice. Different cooking fats. The list goes on. So when someone says, “I don't like Indian food,” the obvious question might be: Which Indian food? Because chances are, there is a lot they have not tried. 

Spices Are Not There to Challenge You 

There is a strange assumption that Indian food has one purpose: to be spicy. That is not really how it works. Yes, some dishes bring serious heat. But spices do much more than that. They can make a dish smell warm and inviting before it even reaches the table. They can add earthiness, sweetness or a little sharpness. Some ingredients are meant to be noticed immediately. Others sit quietly in the background and make everything else taste better. A dish does not have to make your eyes water to be full of spice. Sometimes the most interesting flavours are the ones that take a few bites to notice. 

There Is Always Someone Ordering the Same Thing 

Every group has one. They know exactly what they like. They do not need to look at the menu. They are happy with their usual order, and honestly, there is nothing wrong with that. Finding a favourite dish is one of the pleasures of going to a good Indian restaurant. The first few visits might involve trying different things. Eventually, something becomes your order. The dish you suggest when someone asks where to eat. The thing you miss when you have been away too long. The meal you look forward to before you even leave home. But then, occasionally, someone at the table orders something else. Suddenly you are asking for a bite. That is how favourites get replaced. 

Trying Something New Is Half the Fun 

A good Indian menu can make deciding difficult. You may recognize some dishes and have absolutely no idea about others. That is not a bad thing. The best way to discover more about Indian cuisine is to be a little curious. Order something you already know you enjoy, then add one dish you have never tried before. You do not have to understand every ingredient before tasting it. Food is allowed to surprise you. Maybe you discover a new flavour you love. Maybe it is not your thing. Either way, you now know. There is always another dish to try next time.
